Who’s Hungry?! New look, new menu, new champagne bar - and a new team of Rockstar chefs at Bathers’ Pavilion Balmoral!

An all-star line-up of chefs will usher in a new era at Bathers' Pavilion when the landmark restaurant re-opens in October.
Speaking with Mosman Collective, owner Serge Dansereau has confirmed he has a new business partner – and an award-winning culinary team – ready to take the venue forward.
Former ACME and Bar Brose owner Cam Fairbairn will join Bathers’ as GM of Service, alongside new Head Chef Cameron Johnston (St Claude’s, Jonahs) and pastry Queen Kumiko Endo (Attica, Tetsuya).
Brit Jess Mead, who has worked most recently with the Merivale Group, has been appointed as Restaurant Manager.
Car dealership giant Ian Pageant, who previously funded MG Garage and its spin-off, Fuel, is on-board as Bathers’ new business partner, “who is in 50:50 with me,” Serge said.
The ten-week renovation of the iconic Balmoral building is well underway, with interior design firm Luchetti Krelle said to be “thrilled” with the progress of Bathers’ makeover, which will include a new lounge area, an all-day bistro, a sunroom – plus a chefs table for 12.
But that’s not all.
Word is that Serge has given the green light to Sunday sessions on the rooftop terrace, which will offer champagne and oysters at sunset.
